Protein & Mineral Ayurvedic Salad Dressing

I use this dressing all the time. It's super easy to make, and delicious! Most of all, it offers great health benefits. Experiment with the exact amounts. The idea is to think about balancing out all the tastes so that not one ingredient is overpowering.


2 cups sprouted mung beans

Oilve Oil, a generous amount, like 2 cups

Juice of 4-5 lemons

Himalayan salt to taste

Black pepper to taste

Tumeric

Tamari

1 green chili - can include the seeds

water

2 cups sunflower seeds

Tahini

2 tablespoons of good quality honey


This makes quite substantial batch of dressing. Adjust quantity to make a smaller amount. In Ayurveda, a lot of cooking is done by eyeballing how much to add, so don't worry about exact measurements. Mix together and pour over clean, fresh salad or over roasted vegetables. Keep in mind, during the winter months we avoid eating too much salad. It's too cold and rough for the winter months. Salad is better during the summer months, when we need to eat more cooling foods. You can also add a 1/2 tsp. of ghee to the dressing. The lemon juice helps digest the minerals. It's good for brittle bones.
